Provenance

The fish is chosen each morning at Toyosu, in Tokyo. The order of the meal is set that day. Nothing is held frozen for the counter.

Ōtoro is Ōma bluefin, taken on a single line off the north of Aomori. Uni comes from Rishiri, in Hokkaidō, packed without alum. Kohada is cured on the premises, in salt and then rice vinegar.

The rice is Sasanishiki from Miyagi, seasoned with red vinegar aged three years. Wasabi is grated from Izu stems to each piece. Nothing reaches the counter that the itamae has not finished by hand.
